Con pazienza e sapienza si è ricercato un perfetto equilibrio tra il sapore del formaggio e quello del tartufo, in maniera che nessuno dei due sovrasti l’altro, fino a raggiungere un sapore delicato, ma deciso e raffinato. Il formaggio viene affinato canestrato a scalzo diritto, la crosta si presenta di colore marrone o
marrone chiaro. La confezione in legno ne esalta e ne preserva le qualità organolettiche.
